Malt Bill:
Mini-mash:
2 lbs 2-row Pale malt
2 lbs Special Roast
0.5 lbs Crystal 80L
0.5 lbs Crystal 120L
0.5 lb Black Patent
0.5 lb Chocolate malt
Other fermentables:
3 lbs Dark DME - 60 min
1/3c Molasses - 60 min
6 lbs Dark LME - 15 min
1/3c Molasses - 10 min
0.5 lb Brown Sugar - 0 min

Mash at 145-150° for 60 min
OG: 1.080

Hop Bill:
2 oz Perle @ 60 min
0.5 oz Mt. Hood @ 10 min
0.5 oz Centennial @ 5 min
IBUs: 40

Fermentation:
Yeast - Cal Lager yeast, no activity. Re-pitched Superior Lager yeast
Temp - 66°
Duration - 5 days
Lagered at 40° - 21 days FG: 1.030
ABV: 6.8%
